been looking at portable 12v electric coolers and freezers. There are a lot that will simply plug in to the cig lighter, but it sure seems like a lot to ask of a conection like that to run a 48 quart cooler as an example. They range in price from about $120 for a cooler to actual freezer for $500. Wanting to put one on the fly for long trips. Would only leave it plugged in when needed and on the boat.

The two best known brands would be Engel (http://www.engel-usa.com/) and Weaco (http://www.dometic.com/enus/Americas/USA/Marine/Refrigerators/).

We have neiother but I have seen both in action and they are awsome. We were out at the dock at Plumper one weekend in summer and Sunday night (after the whole weekend at the dock with no shore power) we had icecream from an Engel which the guy had in the cockpit.

They're quite a bit more expensive than the price range you mention above though. More like $800-$1200.

Have you considered just using a large igloo cooler and fill with ice. Most marinas sell ice and it last a few days in the cooler if you don't leave it open.

We do use a cooler, and we have the ice maker. But we are hoping to be gone some long stretches this year. Our destinations in Canada offer the best beer, good veggies, fish is good, but when it comes to chicken and beef and pre-cooked stuff well, I would rather have some home cooked frozen foods and an ice chest just doesn't hold it that well.
